Sticky Marmalade and Carrot Flapjacks

I do love flapjacks and I dont know why I dont make them more often. The other week I made some Sticky Marmalade and Carrot Flapjacks and they were really nice! So nice infact that I made two batches in one week!
Here is how I made them 


Makes 12

Ingredients:
115g unsalted butter
115g honey
50g caster sugar
175g porridge oats
50g grated carrot
25g raisins
2 tbsp marmalade

Method:
Pre heat the oven to 180oC / 160oC (fan)
Grease and line a 2lb loaf tin
Place the butter, honey, sugar and marmalade in a saucepan and gently melt over a medium heat 
Once melted, remove from the heat and add the oats, carrot and raisins and mix well
Pour into the tin and smooth off the top
Cook in the oven for about 25-30 minutes 
Remove carefully, and brush over the remaining tbsp of the marmalade over the top of the hot flapjack
Mark the 12 portions with a knife
Leave to cool completely in the tin and then remove and cut up



Sticky, tangy and gooey - delicous!

  1. Those look lovely & moist! I know why I don't make flapjacks more often....because I would eat too many! I suppose the addition if carrot makes them healthy though, right??
