Banana and Vanilla Chai Tea Loaf

I was recently sent some Vanilla Chai and Black Tea tea bags from Tea India, a new premium tea range offering something that bit different to enjoy drinking at home at cuppa - tea o'clock.


I do enjoy a good cup of tea but I also enjoy eating a yummy tea loaf so having some ripe bananas at in my fruit bowl and some of these authentic vanilla chai tea bags to hand, I decided to make a banana and vanilla chai tea cake.

The cake itself is fatless and uses fat free yogurt making it a bit less calorific than some cakes. It was ever so easy to make and here is how I did it.


Makes 2 tea loaves (perfect for freezing one for another day)

Ingredients

350g self raising flour
pinch of salt
225g caster sugar
220g vanilla fat free yogurt (I used Mullerlight)
3 eggs
325g ripe banans
8 tbsp brewed Tea India vanilla chai tea (2 tea bags)

Method

Pre heat the oven to 160oC 
Grease and line 2 x 2lb loaf tins 
Boil your kettle and then using 2 vanilla chai tea bags make a cup of tea (don't add any milk!) and leave to cool and keep the tea bags in the cup
Mash the bananas and then to them add the yogurt, sugar and eggs and beat together
In a large bowl add the sifted flour and salt and then pour in the banana mixture and the 8 tbsp of now room temperature tea
Stir well to mix all of the ingredients together
Divide the batter between the 2 loaf tins and place into the oven and cook for about 45-50 minutes until cooked through


Allow to cool before slicing up 


It is a really tasty tea loaf and being fatless does mean that the texture of the cake is different to a normal cake, more like bread I suppose but I really enjoyed it and felt a little bit virtuous that it was less fattening than most cakes I make! As well as enjoying it with a cup of tea for elevenses or maybe after lunch, I enjoyed it for breakfast!


The vanilla chai flavour is subtle but it is there and makes for a banana cake with a difference.  


Perfect with a cup of Tea India black tea even, which is the perfect brew for starting me off properly in the morning and getting me through the early morning kids TV before 7am !!
