Since I first discovered the irresistable taste of the Oreo cookie, I am always thinking of yummy ways to include them in my cakes and bakes. I have already made some Oreo Cupcakes but when my dad came to visit me last week I wanted to incorporate them into a cake again, so I decided to try out my new rectangular cake pan so I opted for an Oreo Traybake Cake.
Makes 12 squares
Ingredients:
175g self raising flour
25g coca powder
200g caster sugar
200g unsalted butter
4 eggs
12 Oreo cookies
200g philidelphia full fat soft chese
200g milk chocolate spread
5 Oreo cookies
Method:
Pre heat the oven to 180oC / 160oC (fan oven)
Grease and line a 12" x 8" baking tin
Beat the sugar and butter together until pale and creamy
Add 1tbsp of the flour and then the eggs and beat well
Fold in the flour and cocoa powder until mixed through
Pour the cake batter into the cake tin and add the cookies to the tin equally spaced to make 4 by 3
Then push each cookie down with your finger and use a tsp or knife to cover over each cookie with the cake batter
Place in the oven for about 25 minutes until the cake is cooked through
Remove and allow to cool completely before cutting into 12 sqaures
For the Oreo frosting:
Place the cream cheese and chocolate spread into a bowl and beat together
Crush 2 of the Oero's and add them to the frosting and stir
Put the frosting into a piping bag and then pipe on top of each cake square
Cut the 3 remaining Oreo cookies into 4 and top each cake with a 1/4 for decoration
Then enjoy!!
They are a little indulgent but delicious all the same!
