The boys great gran is always giving us kit kats - every time we see her she gives us a couple of multi packs! Last time we saw her she gave us some chunky ones and with some family coming for lunch a few days afterwards, I decided to use some and make some chunky kit kat cupcakes to offer with a cuppa.
This recipe would work equally well with regular kit kats - any flavour one could be used too.
Of course supermarket own version of this chocolate bar would also work (which is what I buy myself)
Makes 12 regular sized cupcakes
Ingredients
150g caster sugar
150g unsalted butter
3 eggs
150g self raising flour, sifted
2 chunky kit kats
75g unsalted butter at room temperature
125g icing sugar, sifted
25g milk chocolate melted and allowed to cool
1-2 tsp milk
2 chunky kit kats
Method
Pre heat the oven to 180 oC/160 oC fan
Beat together the butter and sugar until soft and creamy
Add the beaten egg and flour and mix well
Crush the 2 chunky kit kats (I banged each bar with a rolling pin) and add to the batter
Stir to mix all the kit kat into the batter evenly
Divide the batter between your 12 cup cake paper cases
Place in the oven and cook for 15-20 minutes until cooked through
Remove and allow to cool thoroughly
Meanwhile make your buttercream:
Beat the butter and sugar together until smooth
Then add the wet ingredients and mix well
Place into a piping bag and swirl onto each cupcake
Top each chocolate swirl with a piece of the chunky kit kat (I divided each bar into 6 pieces)
The kit kat is dispersed within each cake and it adds a lovely texture to each mouthful - kind of chewy and chocolatey.
