Banana, Snickers Bar And Chocolate Cake

Whenever I have over ripe bananas I try to use them up in some sort of cake recipe as I hate to waste them, indeed I have featured a few on this blog in the past. As I am visiting a friend for lunch tomorrow I thought I would make something sweet and tasty to take along with me. Having searched my cupboards for ingredients I found some Snickers bars and thought that a banana, peanut, caramel and chocolate cake would work rather well. 

Hence, my banana, snickers bar and chocolate cake was born and here is how I made it.


This recipe made 2 loaf tin cakes *

Ingredients:

100ml melted butter
175g self raising flour
25g cocoa powder
175g caster sugar
3 eggs
50ml yogurt (I used banana flavour, but vanilla or toffee would also work)
4 small ripe bananas (or 2 large ones)
1 large Snickers bar

100g full fat cream cheese
4 tsp of chocolate and caramel spread
1 large Snickers bar

Method:

Grease and line 2 x 2lb loaf tins and pre heat the oven to 160oC/140Oc fan
Melt the butter on a low heat and leave to cool for a few minutes
Mash the bananas in a bowl
In a large bowl, sift in the flour and cocoa powder and add the sugar, eggs and yogurt and the melted butter
Mix well until combined being careful not to over mix
Slice the Snickers bar into thin slices
Fold in the bananas and snicker bar slices
Pour the batter into both tins and place in the oven
Cook for about 1 hour and check its cooked by inserting a knife to see if it comes out clean
Allow to cool

Meanwhile make your frosting 
Place the cream cheese and caramel and chocolate spread into a bowl and mix well together until combined and silky smooth and creamy

Once your cakes have completely cooled, spread the top of each one with the frosting and then decorate with slices of Snickers bar





The cake is moist and sticky and nutty and the frosting is just yummy!! A great tasting  and very easy cake for making last minute if you have visitors or just fancy something nice to accompany your tea or coffee. Especially if you have some over ripe bananas of course!!


(*If you don't want to make two cakes in one go, simply half the ingredients or once the cakes have cooled down, wrap one in foil and freeze unfrosted*)
