Banana Pancakes With Caramel And Chocolate Spread

As regular visitors will know I am always having to think up recipes to use up ripe bananas as I do hate to waste food. I also enjoy creating recipes using whatever I can find in my kitchen cupboards and fridge.

I decided to make some pancakes and add the bananas to the actual batter and then top the cooked pancakes with some caramel and chocolate spread for an indulgent breakfast treat. They tasted really good - just a shame that I couldn't persuade my children to eat one !!

Here is how I made them


Makes 8

2 cups self raising flour
2 cups of milk
2 eggs
pinch of salt
2 over ripe bananas
oil for cooking with (I use fry light as I find this ideal for pancake cooking)
chocolate spread of your choice

Method

Mash your bananas
In a large bowl place the flour (I sift mine), eggs, milk and salt and beat well to eliminate all lumps
Add the banana and beat again to make a smooth batter
Place a non-stick pan on a medium heat and add enough oil to lightly coat the pan
Add a ladle full of batter and spread out into a pancake shape and cook each side

Then simply spread with your chocolate spread and roll up and enjoy - mmmmmm


I love the slight taste of banana which comes through and the oozing chocolately and caramel sauce which melts slightly from the heat of the pancake is just delicious!


It certainly made a nice change from using up over ripe bananas in a cake - I will be making these again!

    Ohhhh, pancakes! I love pancakes. Sadly they aren't supposed to be in my vocabulary until October (holiday). Glad you liked them :)

    My goodness, these look yummy, very indulgent. I love using bananas in cooking. Will be making a banana honey cake and a banana ginger cake later this week. *slurps*
