I enjoy a bit of a cooking challenge so when cool cookery set one which involved coming up with a dish that used only ingredients found in the freezer ailse of the supermarkets (plus maybe some condiments fround in your own store cupboard), I could not really refuse. Afterall, this is the type of thing I do on a daily basis when I am trying to think of food to feed my family with.
I decided to go with a dessert after browsing the freezer section of the supermarket at the weekend. I initially thought I would make a kind of fruit strudel using puff pastry, so I bought some ice cream, frozen fruits of the forrest and some puff pastry. However, when I got home and decided to make my pudding, I changed my mind and made some hot ice cream and chocolate spread parcels, which I served with a fruit puree.
Serves 4
250g frozen puff pastry, defrosted
4 scoops of vanilla ice cream
4 dessert spoons of chocolate spread
icing sugar
1 handful of frozen fruits of the forrest, defrosted
1 tbsp icing sugar
sunflower or vegetable oil
Divide the puff pastry into 4 pieces and roll each piece out onto a board which has been dusted with icing sugar to make a square which is about 12 x 12 cm approx
Spread each pastry square with chocolate spread
Top with the ice cream
Fold in haf and crimp the sides together
Place on a icing sugar dusted plate and place back in the freezer for about 20 minutes or until you are ready to cook
When you are ready, heat enough oil in a deep pan to fry the parcles in
When the oil is hot, carefully drop two parcels at a time into the oil and fry for a few minutes until the pastry turns golden brown (taking care not to split the pastry when removing as i did!), and then remove and serve.
I served my parcels with a fruity puree which I made by placing the defrosted fruit into my blender, added the icing sugar and blitzed until the fruit is smooth.

It tasted really nice -hot puff pastry with gooey chocolate sauce and ice cream which was still a little cool. It was just a shame I split the pastry parcels before I had a chance to break into them with my fork and spoon!
