Lemon Meringue Ice Cream


Allowing 1 scoop per person this will serve 10 people

You will need

300ml double cream
1/2 tin of condensed milk
Lemon curd - I used the value type os used a whole jar but if you used a better quality one then/2 a jar would be sufficient
2 meringue nests broken into pieces

Method

Place the cream and condensed milk into a mixing bowl and whisk until the mixture forms soft peaks
Add the 3/4 of the lemon curd and mix with the whisk for about 30 seconds longer
Then add the remaining lemon curd and mix though to leave a swirly effect
Add the meringue and stir
Pour into a 1 litre plastic tub and put the lid on
Place in the freezer for at least 6 hours or over night

Then serve as desired, I placed a scoop inside a meringue nest but this is optional


Its really tangy and creamy and the texture of the meringue chards as a nice little crunch to each mouthful 

So impressed was my Step Dad that he has requested this for Christmas Day!!
