Here is another way to use up ripe bananas and an excuse to eat more cake aswell!
For Double Chocolate, Banana & Raspberry Muffins you will need:
3 ripe bananas
125ml olive oil
100g brown sugar
2 eggs, beaten
225g flour
1tsp bicarbonate of soda
3 tbsp good quality cocoa powder
2 handfuls of raspberries
Some White chocolate buttons or similar
Makes about 16 cakes
Heat oven to 190oC / 170oC fan ovens
Mash the bananas and then add the oil, eggs and sugar and mix well.
Then add the sifted flour, cocoa powder and bicarb to the mixture and mix well but do not over mix. If the cake mixture is a little stiff you can add a tiny drop of milk.
Stir in the raspberries and white chocolate
Divide between the paper cases and cook in the over for about 20 minutes or until cooked.

Well you could remove the White chocolate and add nuts instead? That's a bit more forgiving *ahem* x
