Malteser Chocolate Cheesecake

I recently ate at a local pub where they had a homemade malteaser cheesecake on the menu which was very nice. So I decided to try and make one myself at home and this is how I made it.

INGREDIENTS

300g chocolate digestive biscuits
100g unsalted butter, melted
300g tub of full fat soft cheese
200ml double cream
200g bar of good quality milk chocolate (you could use white chocolate)
Large bag of malteasers (again could use the milk or white chocolate ones)

METHOD

*Grease and line either a deep loose bottomed round tin or grease and cover with cling film a 2lb loaf tin.
*Crush the biscuits into crumbs and add to the melted butter and stir well
*Then put the crumb mixture into your tin and press down. Chill in fridge while you make the filling

*Melt the chocolate with a spoonful of the cream in a saucepan on a low heat, stirring all the time so it does not burn.

*Put the melted chocolate mixture, the rest of the cream
and the cream cheese into a food processor or large bowl,
and mix until smooth.

*Add lots of malteasers to the filling but leave some for decoration

*Then pour the mixture on to your base and decorate with
malteasers & chill for at least 3 hours or overnight

Then turn out & serve.
and it tastes deeeelicious, even if I do say so myself :0

  1. Oh. My. Word. This looks lush, and I'm fairly certain that there's no possible way to make a diabetic version of this, so I'm just going to have to throw caution (and my sugar levels) to the wind!

    Very well done!
