BananaBerry Loaf Cake


This is a great way of using up fruit and it tastes good too! 

You will need:
2 large ripe bananas, mashed
2 medium eggs, beaten
75g butter, melted
125g /4oz vanilla yogurt
100g caster sugar
200g self-raising flour, sifted
½ tsp baking powder
100g blueberries
100g raspberries

Then you need to:

Pre-heat the oven to 180oC/160oC (fan)
Grease and line a 2lb loaf tin
Put the mashed banana, eggs, butter and yogurt into a bowl and mix well
Add the dry ingredients and mix again to fold them into the wet ingredients.
Add the fruit and gently fold into the cake batter being careful not to over mix incase you crush the berries
Spoon the mixture into your tin about 3/4 full *
(*You will probably find you have a bit leftover which you can use in paper cases to make muffins which will need cooking for 20-25 minutes*)
Smooth the top of the mixture
Cook in the oven for about 65-75 minutes (check it is cooked by inserting a knife to see if it comes out clean)
Once cake has cooled, remove from tin


It is very moist and fruity and contains fruit so has to be a bit healthy surely!?

  2. ooh looks lovely!  will have to try this, although we never have any leftover blueberries or raspberries so it may have to be dried! x

  5. Sounds yummy - not sure I should make it though as no one else in my house likes banana loaf which would mean I would have to eat it all!
