I wanted to bake something yummy for my best friend's birthday. I have done the Malteser cake and muffins and cupcakes to death really - well, I could make another variation but as I say I have made a lot!!!
I had some Oreo cookies in my cupboard and remembered from a previous I Love Cake that Emma once made some cupcakes with a whole Oero inside each cake! I have been meaning to give this a go myself, so hence my own Oreo Cupcakes were born!!
I have made my cakes layered - because I just like the idea of vanilla flavour sponge with a chocolate flavoured part just like an Oreo cookie! I also did the same with the butter cream topping too by combining the two flavours and colours.
Makes 12
Ingredients
175g self raising flour
200g caster sugar
200g unsalted butter
4 eggs
25g cocoa powder/drinking chocolate
11/2 tsp vanilla essence
12 Oreo cookies (whichever variety you like)
Toppings
1 tub of ready made chocolate buttercream
1 tub of ready made vanilla buttercream
(I used Betty Crocker)
6 large Oreo cookies cut in half
or
12 mini sized Oero cookies
Method
Pre-heat the oven to 180oC / 160oC fan oven
Beat the butter and sugar together until pale and creamy
Divide the mixture between two large mixing bowls
Then add 100g flour, the vanilla essence and 2 eggs to one bowl
To the other bowl add the remaining flour, eggs and cocoa powder
Mix the ingredients in each bowl to make a creamy batter
Line your muffin sized baking tray/trays with your paper cake cases
Into each one add 1 heaped tsp of chocolate cake batter into the bottom, add an Oreo cookie and then top with another heaped tbsp of the vanilla cake batter
Then cook in the oven for 20-25 minutes , until cooked
Then add a spoonful of each butter cream alternatively into a piping bag and pipe onto the top of each cupcake (about a 1/4 of each tub)
You can buy dual nozzled piping bags but I don't have one of these so I had to improvise!!!
Then top each butter cream decoration with your Oero topper
Mmmmm just deeeelicious!
