I don't really think these Apple And Blueberry Muffins need an introduction - they are what they say on the 'tin' !!
Makes 9
Ingredients:
150g caster sugar
200g self raising flour
2 tsp cinnamon (optional)
2 eggs
150ml oil ( I used olive but sunflower or vegetable would work fine)
200g peeled and grated apple
25g blueberries (I used dry)
4 tbsp apple juice
Method
Pre-heat your oven to 180oC / 160oC fan
Mix the eggs with the oil by whisking
Place all of the dry ingredients into a large mixing bowl
Pour in the eggs, oil and fruit juice and mix until combined
Add the grated apple and blueberries
Mix again
Divide batter between 9 muffin cases and place into the oven and cook for 22-25 minutes until cooked all the way through

ReplyDeleteAhhh these look ace! And Dairy free! My diabetic brother has recently found he has a dairy allergy (as if diabetes wasn't enough to content with on it's own) so these will be perfect for him (in small batches of course!)

ReplyDeleteto get those paper cases you can either cut squares of grease proof paper or you can but paper cases like this they are called Tulip cake cases x
