Glittery Malteser & Kit Kat Cake (I Love Cake)

I have seen on google and pinterest lots of celebration cakes featuring Kit Kat fingers around the sponge with smarties on the top. Well, I wanted to make my own version and as we are big fans of Maltesers in my house, I created this

Its a triple layered chocolate sponge cake and to make it you need to do this:

Ingredients:

For the sponges

 250g unsalted butter
250g caster sugar
4 eggs, beaten
225g self raising flour, sifted
25g cocoa powder, sifted
( 2 tbsp milk if the batter is a little stiff once all ingredients have been added)

For the filling and decoration

1 tub Betty Crocker chocolate fudge rich and creamy icing
1 tub Betty Crocker chocolate buttercream
2 grab bags of maltesers
19 x  2 fingered kit kats
silver shimmer cake spray (I used Dr Oetkar)

Method:

For the sponges

Preheat the oven to 180oC / 160oC fan
Cream the butter and sugar together until light and creamy
Then add the eggs, flour and cocoa powder and mix together until combined
Add the milk if required now and mix in.

Grease and line three 20cm diameter cake tins and divide the batter between them

Place in the oven and cook for 20 - 25 minutes until cooked through

Then allow to cool thoroughly before adding your buttercream and decoration

Malteser Buttercream
Now you can make your own chocolate buttercream by all means, but I cheated and bought some ready made - sometimes life is too short and they were on special so decision was made!

Simply empty a tub of the buttercream into a bowl
Crush half a grab bag of Maltesers so it makes lots of small rough and ready chards
Mix the crushed Maltesers into the ready made buttercream and job done!

Once your sponges are completely cooled, assemble by sandwiching them together using your Malteser buttercream

Then using your chocolate fudge rich and creamy icing, coat the outside and top of the cake with it

Then add your Kit Kat fingers around the perimeter of the cake - ensuring you 'stick' them to the icing well

Then tip your bag and a half of Maltesers on to the top of the cake to cover it up completely, and using your shimmer silver cake spray (optional of course, you could buy the gold one!) coat the entire coat to make it all shimmery and pretty

It is a bit if a monster cake and a little goes a long way - it is very filling indeed!

BUT for a special occasion like a birthday or maybe a Christmas cake it would be amazing!!!

** I entered this photo in the Action Against Hunger’s Love Food Give Food Instagram Competition. I’ve just found out my photo was selected as one of the top 20 in the competition and so will be entered in the Pink Lady Food Photographer of the Year Competition (in the Food Sn-apping category)! **
