With Mothering Sunday just around the corner I have been thinking about what gift to get for my mum. I think it's nice to show my her how much she is thought of and how thankful I am to have her in my life and my boys.
This year my brother is coming down and bringing Mum to my house where for lunch and I will make a cake for her. One of her favourite cake flavours is lemon and last year I made one that she really enjoyed for her birthday so I thought I would make it again for Mothering Sunday. It is taken from Cupcakes from the Primrose Bakery book which has some fab cake recipes in it. I have adapted it slightly by making the cake batter a bit differently and adding lemon curd to sandwich the sponge together, which is why I have changed the name of it, but the recipe is as follows
Cake:
225g caster sugar
225g self raising flour
1 1/2 tsp baking powder
25g cornflour
225g unsalted butter, at room temperature
4 large (free range from my 'would be' in-laws chickens) eggs
Juice and grated zest of 2 large or 3 small lemons
Filling:
A batch of butter cream - I have cheated and used a ready made one (I can make my own as my previous recipes have shown but I didn't have enough icing sugar so ready made is always handy to have as a standby I think!)
Jar of good quality lemon curd
Pretty edible cake decorations
Preheat oven to 170oC (fan) or 190oC
Grease and line two 8inch sandwich tins
Cream the butter and sugar together until pale and creamy
Add the eggs and beat well
Stir through the zest and juice from the lemons
Divide the mixture between the two tins and cook for about 25-30 mins until springy and a knife comes out clean when inserted
Once completely cooled, spread the butter cream on the inside of one sponge and the lemon curd on the other and then carefully sandwich the two together.
Add more butter cream to the top of the cake and then decorate with some pretty things of your choice - I am using wafer flowers

I used the cake stand to sit my zesty lemon cake on, and although it seemed small when I first saw it, it does in fact make the perfect fit for a 8 inch sponge cake
